Fried Fish with Chilli Sauce (Plah Rad Phirk)
Ingredients:
- 75 g fish (kao,kapong)
- 5 g corn flour
- 1/2 tbsp chopped red chilli
- 1/2 tbsp chopped shallot
- 1 tsp garlic
- 1 tsp coriander root
- 1 cup vegetable oil
- 1/2 tbsp tamarind
- 1 tbsp brown or palm sugar
- 1/2 tsp sea salt
- 1/4 cup stock (chicken soup)
Directions:
- Combine coriander root, garlic, chilli, shallots in a mortar and grind until smooth, set aside as paste.
(A blender can be used for this step) - Roll fish in the corn flour and fry in vegetable oil until golden brown and crispy, remove from oil.
- Put 1 tablespoon of oil in the hot pan and add the following ingredients: paste from step #1,
stir until fragrant. Add sugar, tamarind, salt, stock and boil to a thin sauce. Remove from heat. - Pour the sauce over the fried fillets.
