Fried Fish with Chilli Sauce (Plah Rad Phirk)

Ingredients:

  • 75 g fish (kao,kapong)
  • 5 g corn flour
  • 1/2 tbsp chopped red chilli
  • 1/2 tbsp chopped shallot
  • 1 tsp garlic
  • 1 tsp coriander root
  • 1 cup vegetable oil
  • 1/2 tbsp tamarind
  • 1 tbsp brown or palm sugar
  • 1/2 tsp sea salt
  • 1/4 cup stock (chicken soup)

Directions:

  1. Combine coriander root, garlic, chilli, shallots in a mortar and grind until smooth, set aside as paste.
    (A blender can be used for this step)
  2. Roll fish in the corn flour and fry in vegetable oil until golden brown and crispy, remove from oil.
  3. Put 1 tablespoon of oil in the hot pan and add the following ingredients: paste from step #1,
    stir until fragrant. Add sugar, tamarind, salt, stock and boil to a thin sauce. Remove from heat.
  4. Pour the sauce over the fried fillets.
